A: Get what you want
Many times homeowners are so concerned with resale value than what they really want. Anything can look dated and like a fad if it is done in the wrong context or by the wrong people. What is the style of your kitchen? Will the tops be rustic or contemporary? A good design makes all of the materials work as a team, and make sense. I wouldn't call concrete a fad, it may be a fad on HGTV - which tends to give people a false sense of style and pricing- so be careful. An expert concrete artisan can create a timeless look. On the flip, you can hire someone to give you cheap tops that look like a disaster. Do you research, view past jobs, get referrals for whomever you are considering.
Do also realize that concrete will crack and it is porous, and typically 10-20% more in cost than granite or quartz. You can also achieve the "look" of concrete with a quartz material - look at Caesarstone's "Concrete" and "Lagos Blue" these can create a look of concrete with the ease of a Quartz surface.
